Beetroot Cupcakes


Some days are for eating everything 'healthy' and then there are cupcakes!

I was craving for some cupcakes and then these happened. At the end of the day they're cupcakes but I tried  to incorporate some grated beetroot to get that color. Um-hmm they're beetroot and whole wheat cupcakes with EVOO and cane sugar.

Cupcake
s are everyone's weak point and what if these turn out simple and wholesome.


Ingredients:
  • 1 cup whole wheat flour
  • 1/2 cup grated beetroot
  • 1 egg
  • 3 tsp of olive oil 
  • 1 cup of cane sugar
  • 1 tsp of baking powder
  • 1/2 tsp of salt
  • 1/2 cup water

Instructions:
  1. Preheat the oven to 325 degree F
  2. In a mixing bowl, mix together egg, olive oil , sugar and water.
  3. Once the sugar dissolves add grated beetroot and baking powder.
  4. Slowly add the flour into the wet mix and mix gently. Do not over mix the batter.
  5. Line the cupcake tin and liners and transfer the batter to the tin.
  6. Add chopped almonds to the cupcake batter(optional)
  7. Bake for 20 mins and check if the cupcakes are done.(Insert toothpick and if it comes out clean, cupcakes are all done.)
  8. Cool them down on a rack and devour!
