Beetroot Cupcakes
Some days are for eating everything 'healthy' and then there are cupcakes!
I was craving for some cupcakes and then these happened. At the end of the day they're cupcakes but I tried to incorporate some grated beetroot to get that color. Um-hmm they're beetroot and whole wheat cupcakes with EVOO and cane sugar.

Ingredients:
- 1 cup whole wheat flour
- 1/2 cup grated beetroot
- 1 egg
- 3 tsp of olive oil
- 1 cup of cane sugar
- 1 tsp of baking powder
- 1/2 tsp of salt
- 1/2 cup water
- Preheat the oven to 325 degree F
- In a mixing bowl, mix together egg, olive oil , sugar and water.
- Once the sugar dissolves add grated beetroot and baking powder.
- Slowly add the flour into the wet mix and mix gently. Do not over mix the batter.
- Line the cupcake tin and liners and transfer the batter to the tin.
- Add chopped almonds to the cupcake batter(optional)
- Bake for 20 mins and check if the cupcakes are done.(Insert toothpick and if it comes out clean, cupcakes are all done.)
- Cool them down on a rack and devour!
