Sweet Coconut Poha




Very often, we crave for something sweet or plan sweet naivedya to offer God. The first thing that comes to our mind is usually the sheera or as most of us know - sooji ka halwa. Ever wondered how cool it would be if this sweet is healthy and made in minutes?  I have got this interesting recipe for you guys- Sweet coconut Poha. Its sweet yet healthy, easy to make yet looks million dollar.







Ingredients:
  • 2 cups of thick Poha(flattened rice)
  • 1/4 cup jaggery (you can also substitute honey in this case)
  • 3 tsp water
  • 1/2 tsp of cardamom powder
  • 4-5 finely chopped almonds and pistachios
  • 4 tsp of grated coconut
  • 2 tsp water for syrup
  • 1/2 tsp of ghee
Instructions:
  • Rinse Poha thoroughly and let it sit for some time.
  • Place a deep pan on low flame and add 2 tsp of water to it.
  • Add jaggery to the water and allow it to melt completely. We don't need to have any string consistency, just be sure it's not to watery. Let it turn into syrupy texture. Add cardamom powder to infuse the beautiful aroma of the spice.
  • Once the syrup thickens, add Poha and gently stir it letting the Poha to soak all the sweet syrup. Cover the pan with a lid and let it cook for 2 mins on low flame.Then turn off the flame.
  • Meanwhile place another small pan on low flame and add 1 tsp of ghee.
  • Add grated coconut and saute them.
  • Add chopped dry fruits to the coconut and roast them until slightly brown. Turn off the flame and add this dry fruits and coconut mixture into the Poha
  • Gently mix all the ingredients.
  • Sweet Poha is now ready and can be offered to God as Naivedya or served to others as healthy dessert alternative.
PS: If you are using honey instead of jaggery, add 3-4 tsp of honey to water and let the mixture thicken.Then continue the process from step 4.
